Once upon a time, Mandi was a dish for the elite — reserved for weddings, feasts, and honored guests in the villages of Yemen. It was a sign of pride, prestige, and craftsmanship. Rich cuts of meat, slow-roasted underground. Fragrant rice, infused with fire and spice.
But not everyone had access to it. It was a luxury.
